  • 18 teaspoon baking powder
  • 12 teaspoon baking soda
  • 12 cup dark chocolate chips (60 percent cocoa)

Preheat the oven to 350 degrees F. Blend the chickpeas and nut butter in a food processor for 1 minute. Also blend in the honey or agave and vanilla extract until the mixture is smooth and free of lumps.

Blend it in the baking soda, baking powder, and salt for 30 seconds, then stir in the chocolate chips. Bake around 12 to 14 minutes, depending on the size of the cookie dough.

  • 14 cup canola oil spread

  • 34 teaspoon liquid stevia
  • 14 cup almond milk, unsweetened
  • 2 tablespoons cinnamon combined with 3 packets dry stevia

Preheat the oven around 350°F and line a baking sheet with parchment paper. Combine almond flour, coconut flour, salt, and baking soda in a medium-sized mixing bowl.

Whisk together the canola spread, egg, vanilla extract, liquid stevia, and almond milk in a small bowl. Pour ingredients that are wet and mix up into dry ingredients and stir until well combined. Roll the dough into 1-inch balls with hands and placing on a baking sheet.

In a small prep bowl or ramekin, combine cinnamon and powdered stevia. Roll each ball in the mixture until evenly coated on all sides, then return to the baking sheet, spacing them with 2 inches apart.

Use the bottom of a small cup or jar to flatten the cookies. Bake for 15 to 20 minutes on the centre rack, or until the cookies are semi-firm form centre and lightly brown on the bottom.

Allow to cool on a cooling rack. This recipe yields approximately 1.5 dozen cookies.
